This is certainly one of the more elaborate macaroni and cheese recipes I've ever encountered, but it sounds like it would be a great dish to make for special occasions like a holiday dinner. The use of Gruyere cheese is different and not what I'd usually expect to find in a macaroni and cheese dish. I'm definitely holding this recipe on the side and I may give it a try for Thanksgiving since we usually cook some special and time-consuming things for that dinner.

This mac and cheese sounds good, but I probably would only make it once in awhile because of some of the special ingredients (Gruyere cheese) and number of steps involved. Also, I'd probably omit the bread crumbs and try thickening with cornstarch instead of flour.
